Park City Appoints Manuel Rozehnal New Executive Chef at The Farm

The largest ski and snowboard resort in the U.S. kicks off the winter season with an elevated, refreshed culinary experience 
Park City, Utah (Nov. 10, 2015)Park City is thrilled to announce Manual Rozehnal’s appointment to Executive Chef of The Farm, one of many exciting changes to the dining scene at the resort. To complement Rozehnal’s hire and the newly expanded resort’s debut this winter, the food and beverage program will also unveil refreshed menus across various dining locations including The Farm, Murdock’s Café and Red Tail Grill.

Rozehnal, originally from a small village in the mountains of Germany, started professionally cooking at age 15 at Le Meridien in Munich through a three-year apprentice program while he also attended culinary school. He received his culinary fundamentals from his grandfather, who took him hunting for mushrooms in the morning, and from helping his grandmother cook dinner with the foraged produce. After receiving his culinary degree, Rozehnal continued cooking in Germany and Switzerland until moving to Dana Point, Calif. to work as a junior sous chef with world-renowned Chef Michael Mina at Stonehill Tavern. Missing the mountains from his hometown in Germany, Rozehnal was drawn to Park City.
 
Rozehnal’s background has inspired amazing après-ski additions to Park City’s restaurant portfolio, including made-from-scratch soft pretzels with house-made caraway mustard, as well as hot potato soup with cabbage and grilled sausage. Additional programming set to debut this winter at Park City Mountain includes:
 
Dinner and Specialty Hot Cocoa at Murdock’s Cafe
For the first time, Murdock’s Cafe will be open for dinner offering pizza, calzones, baked pastas, salads, as well as wine and beer. In addition, Murdock’s is diversifying the breakfast and lunch menu, adding pizza by the slice, fresh-made doughnuts to breakfast and made-to-order paninis for lunch. After a day on the slopes, warm up with a specialty hot cocoa, featuring imaginative concoctions like:
  • Sandlot – Graham cracker dust, toasted marshmallows
  • 94 Crumbs – Chocolate whipped cream, Oreo pieces
  • Moose Boost – Espresso shot, whipped cream
  • Bear Lake – Raspberry hot cocoa, chocolate whipped cream
  • Mogul Mint – Peppermint hot cocoa, peppermint whipped cream and crushed peppermint
  • Carmel Corn – Popcorn whipped cream, salted caramel
  • Peanut Booter – Peanut butter whipped cream, dark chocolate pieces
New Signature Dishes at Red Tail Grill
The newly-conceptualized Red Tail Grill which focuses on bold flavors and favorite tap house-style bites, has just announced signature dishes including house made Chip ‘N Dip, featuring homemade French onion dip; beet hummus made with a traditional chick pea base; and the smoked Utah trout crostini, made with a creamy smoked trout mousse served on a stone ground baguette. Food isn’t the only addition to the menu, either, with a variety of libations from Moscow Mules to Hot Buttered Rum.
 
Jafflz Toasted Pocket Sandwiches New to Park City
Jafflz toasted pocket sandwiches are also new to Park City this year. Incorporating globally inspired ingredients, these locally-made grab-and-go sandwiches come in a variety of choices for both breakfast and lunch. Jafflz will be served at The Shack and Red Pine Outpost.
